I stumbled upon this recipe when looking for creative ways to use up the leftover quinoa I had.
It takes 5 minutes and will make a perfect lunch or light dinner. Enjoy!
Cold Quinoa Salad with Radicchio, Chicken and Pine Nuts: Ingredients
- 2 cups cooked quinoa, chilled
- 1 small head radicchio, chopped
- 1 cup cooked chicken, cut in bit-sized pieces
- ½ cup cubed feta cheese
- 1 small red onion, chopped fine
- 2 tbsp pine nuts
- ¼ cup chopped fresh parsley
- Olive oil and vinegar dressing, to serve
Cold Quinoa Salad with Radcchio, Chicken and Pine Nuts: Method
- Toss cooked quinoa, chopped radicchio, cooked chicken, cubed feta cheese, chopped red onion, pine nuts and parsley together until all ingredients are well distributed.
- Dress the salad with olive oil and vinegar or my favorite oil and lemon juice
Serves 4
