Cilantro Pesto

It's all in the details...

This is one of those condiments that can make an otherwise boring dish come to life.

I serve this on quesadillas, tacos, black bean soup and even on top of rice.

Cilantro Pesto

1 medium clove of garlic

1/3 cup fresh cilantro

1/3 cup extra virgin olive oil

pinch of salt


Combine the garlic and cilantro in a food processor. Pulse while you drizzle in the olive oil. Season with salt.

  1. This sounds yummy! Last summer I grew a TON of arugula and thought I could maybe make some sort of pesto out of it. I wonder if this would work with arugula as well?
